15 of 17 people found the following review helpful A must for Whole poultry, December 5, 2007 I'm sure there are more uses for kitchen shears than butterflying or hacking a whole chicken into parts, but none will test it's strength and ability more than that task. All our poultry comes whole and I use these on anything that I'm not roasting in tact whole. They are great. The only reservation I have is that since they very easily cut through even the biggest chicken bones, they are certainly sharp and sturdy enough to slice through my hands with ease too. So, work very carefully, especially when using wet raw meat. and don't use these for common tasks such as cutting twine and paper, since they are more likely to cut you the more often you use them. Find a cheaper, not so sharp item for those other tasks. They are strong and sharp and very well constructed, but the two little tags by the handles are sharp and unless you are very careful you get cut by them. I understand their (the tangs) purpose, but for me they are just a bit dangerous and would have preferred a smoother handle area. Edited review It's been over a year and these are just not worth the money. They still cut through bags adn such but I never use them for cutting poultry and barely for herbs. They fall apart TOO easily. I understand the idea of taking apart especially for cleaning, but these fall apart taking them out of the knife block. Best bet, choose some other brand. I'm going to. First, these scissors come apart way too easily... I have hardly ever used them without them separating when I don't want them to. Over time this feature has become quite irritating. Second, the metal handles under the black finger guards are not solid all the way around; there's a gap in the middle that you can't see in the picture. As a result if you are cutting something difficult (chicken being an excellent example) the finger guards will bow inward and you'll lose a lot of your cutting power. So, I still think they are good as kitchen scissors (and that's how they are advertised after all) but not as a miracle tool. Original review, for reference: I just bought my third pair of these which will be intended primarily for office use.
